What I have to share with you today is not a recipe, but a simple tip. When I figured this out, I did a mental forehead smack for not thinking of it before. It’s one of those things that is so simple, yet so helpful. You may already be doing it!
I don’t know about you, but I’ve always had the problem when I’m making cupcakes or muffins that I can’t seem to get a good grip on the muffin pan with the potholder. It seems like there’s nowhere to put my thumb, and I fumble around and end up smushing the hot pad into one of the cupcakes in a panicked effort to not drop the whole tray. This is where my tip comes in. If you just leave the middle spot open on the last row of cupcakes, you can put your thumb in there, and you have a good grip on the pan and no disfigured cupcake! I know, it’s so simple! Not exactly life changing, but it may save some poor cupcake from an unfortunate demise. 🙂
